Valentine's Day... Your Way

It is that time of year again, Valentine's Day... Cue soppy couples in love plastered across Instagram and Facebook. Of course, we are happy for them (promise!) but it feels like they are rubbing salt in the wound given that it is pretty impossible to find love in a lockdown. Or is it?

Celebrate At Home

Bake a yummy desert.

Cooking and zooming - a great way to spend an evening. See below for our favourite valentine's recipe.

Pop open a bottle of prosecco.

(Or any drink) Dry January is over and we all deserve a drink, responsibly of course.

A movie marathon.

Have a Harry Potter marathon or revisit movies from your childhood, can't go wrong with a bit of Mean Girls!

The past year has been somewhat unpredictable. Lockdowns, restrictions and many hours spent on Netflix. It seems the dating world has been somewhat forgotten. Online dating HOWEVER, allows those still seeking love to find it and cherish it - but keeping a safe distance at the same time. Not even lockdown can stop love! A virtual Valentines is basically an excuse to have a proper conversation with someone, maybe on facetime or on zoom, that you have met online.

The world is your oyster! You can do whatever you please. It can be as low key or as extra as you wish. You could send your date flowers, a letter or a gift. You could both order a takeaway and get dressed up and have a virtual dinner date. Or you could stream a movie and watch it together but not quite 'together'. All these ideas are super romantic.

It really doesn't matter! All the activities suggested can also be done alone! (Sometimes your own company is the best). You can cook yourself a nice dinner, even buy yourself a little gift. Anything that will lift your spirits during these strange times is a huge bonus!

The holiday has origins in the Roman festival of Lupercalia, held in mid-February. The festival included fertility rites and the pairing off of women with men by lottery. At the end of the 5th century, Pope Gelasius I replaced Lupercalia with St. Valentine’s Day. It came to be celebrated as a day of romance from about the 14th century. St Valentine's Day is to celebrate romantic love, friendship and admiration. This day is celebrated by sending messages of love and affection to partners, family and friends.

Not only a Virtual Valentines, but a Vegan Virtual Valentines! This recipe is the perfect bite of sweet and creamy strawberry cheesecake inside a dark chocolate shell.

vegan chocolate covered strawberry cheesecake bites | love me, feed me

  • ¾ cup raw cashews, soaked in water for at least 4 hours
  • 2 tbsp coconut oil
  • ⅓ cup strawberries, thawed if using frozen
  • 3-4 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ cup dark chocolate
  • optional: freeze dried strawberries to garnish
  1. To your blender, add the soaked cashews (NOT with the soaking water), coconut oil, strawberries, maple syrup, and vanilla. Blend until smooth and creamy.
  2. If it's not pink enough, add a couple more strawberries. Taste and adjust the sweetness to your liking.
  3. Line a loaf pan with saran wrap. Pour the cheesecake into the loaf pan. Cover with some more saran wrap and place in freezer. Freeze until completely solid.
  4. Once completely frozen, remove from loaf pan, and cut into 32 squares (8 by 4).
  5. Place back in the the freezer on a parchment line baking tray as you melt the dark chocolate in the microwave or over a double broiler.
  6. Place the melted chocolate in a bowl and have your freeze dried strawberries crushed and ready.
  7. Remove the cheesecake bites from the freezer. One by one dunk into the chocolate and get it completely coated, place on baking tray, and sprinkle with freeze dried strawberries. Repeat with the rest of your bites. Place back in the freezer until the chocolate hardens.
  8. Alternatively, drizzle all with dark chocolate.
  9. Keep stored in the freezer. Let thaw for a few minutes before enjoying.
